OK, while I actually tried several new recipes this week, my husband had a hand in cooking most of them…. (or did it all when it came to a recipe that required frying… I’ve been burned by crackling oil a few too many times. perhaps I will get over it by the end of the year and that will be an entry about courage some time in the future.
However, there was recipe I made on my own. I made a great vegan/crock pot friendly recipe of homemade chana masala which was much cheaper to make than buying the frozen stuff at Trader Joes and much more delicious as well.
The main components of this dish are tomato, onion, and cilantro. I used this recipe, but I substituted half the water with vegetable broth to make it a bit more flavorful. I was surprised to find that the chickpeas were the last things to get added- I’m guessing they get mushy if you cook them too long? They have reheated fine so far and I am hoping, based on the TJ’s frozen version, that this can become a keeper for cooking in bulk then saving in small frozen portions. Excellent. Something to add to my monthly planning rotation.
The verdict? This came out a little watery for us so we may cut the water completely next time and just use 2 cups veggie broth. However, it was flavorful and we will make it again in the near future!
