Baking #30: Double (or triple?) chocolate muffins…

IMG_7247Another busy week where we need easy things to take on the go! This week’s recipe was actually inspired by seeing my stage manager eat a DELICIOUS looking chocolate chocolate chip muffin last week. so I decided to bake some based of of the regular greek yogurt chocolate chip muffin I tried back in May as well as some skinny chocolate muffin recipes I found online.

I wanted to try and bake some chocolate chips into the muffin top but that did not go well and ended up taking away some of the fluffiness as I tried to push the chocolate chips in… oh well, lesson learned! IMG_7249They tasted pretty good at least, and aside from needing to buy more chocolate chips, it was an easy recipe that utilized things we already had in the pantry or fridge which is good because we just don’t have time for any big grocery trips right now! I have to admit that I wish I hadn’t skimped out and done the “skinny” recipe. I could definitely taste the applesauce substitute and I’d prefer whole milk and sugar to honey any day… Give me good stuff in moderation instead of lots of mediocre stuff!

Baking #29: Tortillas + Giveaway winner

OK, so this is another project that you don’t technically bake, but it’s main ingredients are flour, oil, and baking soda (and by main I mean those are literally half of the ingredients… the others being water and salt.) so I’m counting it. I have wanted to make homemade tortillas for a while now. We love Mexican food in our family (we love any food that lends itself to intense spice) so we knew this would go over well. Baking #25: Honey Oatmeal Bread

A short post is better than no post at all:
image1Well we survived the fist week of summer camp with baby in tow… and it’s been a great experience so far but a total whirlwind so I wanted this week’s baking project to be a little sweet but mostly full of sustenance to get us through another week! I’ve had this recipe pinned for years but until I started all these baking projects I was intimidated to try it with all the waiting time for the bread to rise etc. etc. I’ve been wanting to make this recipe all week but had no time until today and it was worth the wait!

Definitely a recipe we will be trying again! The bread is fluffy but hearty and full of flavor. Having it with some melted butter was heavenly!!
We’re gearing up to head into week 2 of camp and I’m up early this morning finishing this blog post since in my quest to take better care of myself, I went and worked out last night instead of writing and editing. Will definitely be having some of this bread tomorrow as a mid-day snack!
