Cooking: Chili Mac

Here’s my problem with Pinterest inspired projects: They often don’t align with my end goal. One of the reasons I wanted to focus on cooking this year was to learn a few more go-to recipes for menu planning so we can cook ahead and/or take advantage of smart grocery shopping and sales. However, it seems that whenever I want to try a new recipe, I go to my Pinterest board or one of my few cookbooks I’ve kept and I end up asking my husband to go to the store for all kinds of ingredients we either wouldn’t usually cook with, or would enjoy cooking with but would never keep as part of our weekly menu! Cooking: FALL CURRY

We are still having many 90+ degree days here in Phoenix, but on cloudy days we get nice 80 degree weather and no matter what it is still a nice respite from the 105+ weather this summer. Plus, we are getting nice fall vegetables in our CSA boxes so when we were given some of the main ingredients for fall curry I knew that would land on our menu this week. Continue reading

Conquering the Insanity of my Digital Photos

I had a big victory this spring while my husband was traveling. I knew I’d have space and time at night after my son went to bed so I tackled the huge project of putting our physical photos into some semblance of order, purging or giving away duplicates or especially blurry/unrecognizable photos, and keeping them in a unified storage space for when I’m ready to use them for scrapbooking or other projects. It took a lot of work and time but was worth it. All that work and time was nothing compared to what I needed to put into the hot mess my digital photo collection used to be. Continue reading

I wrote recently about my love for fall and my gratitude that a rough summer was coming to a close. I had some idea of how isolating being so sick this summer made me, but now that I get a few days each week where I feel human again and can make it out of the house or actually cross stuff of my to-do list, it is throwing into sharp contrast how lonely I really was. Pizza Bowls!

A quick post on a great, super simple recipe. Sadly, pizza sauce is key component so our son could not share dinner with us the night we made these, but we will probably still make this again because they were good, filling, and healthier than ordering pizza!
